  • Heat a large sauté pan over medium high heat. Add your jasmine rice.
  • Gently toast it for 3-4 minutes and continually move the rice around, tossing and swirling. You want it to be golden brown.
  • Then, add it to a mortar and pestle and grind until most of it is fine, with some large pieces. Use it to top dishes (and it’ll help absorb sauce, too).
