Fabulous French Toast

This isn’t a classic french toast by any stretch of the imagination. This is double layered stuffed french toast coated with cornflakes and is going to blow any other breakfast out of the water. Chef Sherry Yard shares her secrets for this ultimate french toast experience.

Ingredients

    • 4 slices Challah, sliced into 1” slices
    • 4 Eggs
    • 1 cup Heavy Cream
    • ¼ cup Milk
    • 1 teaspoon Vanilla Extract
    • Pinch Cinnamon
    • Pinch Nutmeg
    • Pinch Ginger
    • 1 Tablespoon Granulated Sugar
    • 1 cup Cream Cheese
    • Zest of 1 Orange
    • 4 Strawberries, sliced
    • 2 cups Cereal Corn Flakes, lightly crushed
    • 2-4 Tablespoons Unsalted Butter
    • More strawberries, blueberries, and/or raspberries for topping
    • Maple Syrup
    • Powdered Sugar

Instructions

    1. In a medium or large mixing bowl, whisk together the eggs, heavy cream, milk, and vanilla extract.
    2. Mix your spices into your sugar and then add them to your egg custard and whisk it together.
    3. Add your zest to your cream cheese and mix it together.
    4. Schmear a thin layer of the zested cream cheese one one side of the challah. Layer on the strawberries then sandwich another slice of the challah. You can add whatever you like in the middle such as chocolate chips, too!
    5. Next, dip your french toast sandwiches into the egg custard and let it really soak it up, around 15-20 seconds for each side of your sandwich. Then immediately dip that into a bowl filled with your crushed cereal. Make sure to cover all of it with the cereal!
    6. While you let your second sandwich soak, heat a large saucepan over medium heat. Add 2 Tablespoons of butter to your pan and let it melt, if it starts to brown, take it off the flame. Finish coating your second sandwich, then add both sandwiches to the pan. Let them cook 2-3 minutes on each side until they’re nice and caramelized. After you’ve flipped them, you can add extra butter into the pan and flip them again to get them a little more caramelized.
    7. Slice them in half to see the beautiful cream cheesy and berry inside and then top them off with maple syrup, powdered sugar, and more berries.
